Ingredients:
For the Koftas:
- 2 cups of grated boiled potatoes
- 1 cup of grated paneer (cottage cheese)
- 1/2 cup of corn flour
- 1/4 cup of chopped cashew nuts
- 1/4 cup of raisins
- 1 tablespoon of finely chopped ginger
- 1 tablespoon of finely chopped green chili
- Salt to taste
- Oil for deep frying
For the Gravy:
- 2 cups of tomato puree
- 1/2 cup of coconut cream
- 1/4 cup of cashew nuts
- 1 tablespoon of garam masala
- 1 tablespoon of cumin powder
- 1 tablespoon of coriander powder
- 1 tablespoon of red chili powder
- 1 tablespoon of sugar
- Salt to taste
- Oil for cooking
Instructions:
1. In a mixing bowl, add boiled potatoes, grated paneer, corn flour, chopped cashew nuts, raisins, ginger, green chili, and salt. Mix well.
2. Divide the mixture into equal portions and shape them into small balls (koftas).
3. Heat oil in a deep frying pan. Once the oil is hot, carefully add the koftas and deep fry until they are golden brown. Remove and keep aside.
4. In a separate pan, heat oil and add cumin powder. Fry for 30 seconds.
5. Add tomato puree, garam masala, coriander powder, red chili powder, and salt. Cook for 5-7 minutes until the gravy thickens.
6. Add cashew nuts, sugar, and coconut cream. Mix well and cook for another 2-3 minutes.
7. Add the fried koftas to the gravy and simmer for 2-3 minutes.
8. Garnish with fresh coriander leaves and serve hot with rice or naan.
