 Ingredients:

200g paneer (cottage cheese), cut into cubes

3 large tomatoes, roughly chopped

1 large onion, roughly chopped

1/4 cup cashews, soaked in warm water for 20 minutes

1/4 cup heavy cream

1/4 cup milk

2 tsp ghee or butter

1/2 tsp cumin seeds

1/2 tsp ginger paste

1/2 tsp garlic paste

1/4 tsp turmeric powder

1/2 tsp red chili powder (adjust to taste)

1 tsp coriander powder

1 tsp garam masala powder

1/2 tsp kasuri methi (dried fenugreek leaves)

Salt, to taste

2 tsp chopped fresh cilantro, for garnishing

 Instructions:

Prepare the cashew paste: Drain the soaked cashews and blend them in a food processor or blender with 1/4 cup of water until you get a smooth paste. Set aside.

Prepare the tomato-onion puree: In a blender, combine the chopped tomatoes and onions. Blend until smooth and set aside.

Heat ghee or butter in a large pan or skillet over medium heat. Once hot, add cumin seeds and let them crackle for a few seconds.

Add the ginger and garlic paste to the pan, and sauté for 1-2 minutes until the raw smell disappears.

Pour in the tomato-onion puree and cook for 5-7 minutes, stirring occasionally, until the oil starts to separate from the mixture.

Stir in the turmeric powder, red chili powder, coriander powder, and salt. Cook for 2-3 minutes.

Add the cashew paste to the pan and mix well. Cook for another 2-3 minutes.

Pour in the milk and heavy cream, and bring the mixture to a gentle boil. Reduce the heat to low and let it simmer for 5-6 minutes, stirring occasionally.

Add the paneer cubes and gently stir to coat them with the gravy. Cover the pan with a lid and let it simmer for another 5 minutes, allowing the paneer to absorb the flavors of the gravy.

Sprinkle garam masala powder and kasuri methi over the paneer. Stir gently and cook for another 1-2 minutes.

Turn off the heat and garnish the shahi paneer with chopped fresh cilantro.
