Baked Stuffed Tomatoes with Rice


Ingredients:

- 4 large tomatoes

- 1 cup cooked rice

- 1/4 cup chopped onion

- 1/4 cup chopped celery

- 1/4 cup chopped carrot

- 1/4 cup chopped bell pepper

- 1 clove garlic, minced

- 1/4 cup chopped parsley

- 1/4 cup grated Parmesan cheese

- Salt and pepper to taste

- Olive oil for drizzling


Instructions:

1. Preheat the oven to 375°F (190°C). 

2. Cut off the top of each tomato and scoop out the seeds and pulp with a spoon. 

3. In a bowl, mix together the cooked rice, chopped onion, celery, carrot, bell pepper, garlic, and parsley. 

4. Add salt and pepper to taste. 

5. Stuff each tomato with the rice mixture and place them in a baking dish. 

6. Sprinkle grated Parmesan cheese on top of each tomato. 

7. Drizzle olive oil over the top of each tomato.
