Vegetable khichdi is a popular Indian dish that is not only healthy but also easy to make. It is a one-pot meal that is perfect for those who want to eat a balanced diet without spending too much time in the kitchen. Vegetable Khichdi Recipe for a Healthy Meal |
- 1 cup rice
- 1 cup yellow moong dal (split yellow lentils)
- 1 onion, chopped
- 1 tomato, chopped
- 1 carrot, chopped
- 1 capsicum, chopped
- 1 tsp cumin seeds
- 1 tsp ginger-garlic paste
- 1 tsp turmeric powder
- 1 tsp garam masala powder
- Salt to taste
- Water as required
- 2 tbsp ghee
Instructions:
1. Wash the rice and moong dal together and soak them in water for 10 minutes.
2. Heat ghee in a pressure cooker and add cumin seeds to it.
3. Once the cumin seeds start spluttering, add onions and sauté them till they turn translucent.
4. Add ginger-garlic paste and sauté for a few seconds.
5. Add chopped tomatoes and cook till they turn soft and mushy.
6. Now, add chopped vegetables, turmeric powder, garam masala powder, and salt. Mix well and cook for 2-3 minutes.
7. Drain the water from the rice and dal mixture and add it to the pressure cooker. Mix everything well.
8. Add 4 cups of water and mix again.
9. Close the pressure cooker lid and cook for 3 whistles on medium flame.
10. Once done, let the pressure release naturally.
11. Open the lid and mix the khichdi well.
12. Serve hot with curd, pickle, or papad.
Tips:
- You can add any vegetables of your choice to this khichdi.
- Adjust the amount of water as per your preference for the consistency of khichdi.
- You can also add some green chilies for some extra spice.
