Roasted Zucchini and Squash - A Healthy, Delicious Side Dish

Ingredients:

•3 medium zucchini, cut into 1-inch chunks 

•2 yellow summer squash, cut into 1-inch chunks

•3 tablespoons olive oil 

•Salt and pepper to taste

•2 tablespoons fresh or 1 tablespoon dried Italian herb seasoning

•2 tablespoons grated Parmesan cheese (optional)


Instructions:

1. Preheat the oven to 400 F. Line a large rimmed baking sheet with parchment paper.

2. In a large bowl, toss the zucchini and squash with olive oil, salt, pepper and Italian seasoning. Spread evenly on the prepared baking sheet.

3. Roast for 25-30 minutes, stirring once halfway through, until the vegetables are tender and lightly browned. 

4. Remove from oven, sprinkle with Parmesan cheese (if using) and serve hot.


 Precautions:  

Be very careful removing the baking sheet from the hot oven. The high heat can cause burns. Also, the zucchini and squash will release moisture as they roast, so don't overload the baking sheet which can lead to steaming rather than roasting.

Zucchini and squash are low in calories but high in nutrients like vitamin C, vitamin A, folate, potassium and fiber. One cup of roasted zucchini and squash has only about 70 calories but provides a good amount of nutrition.
