- 1 green chili, finely chopped

- 1/2 inch ginger, grated

- 1/4 tsp turmeric powder

- Salt to taste

- 1/4 cup roasted peanuts

- 1 tbsp lemon juice

- Chopped coriander leaves for garnish


Instructions:

1. Rinse the poha in a fine-mesh strainer under running water until the water runs clear. Set aside to drain.

2. Heat oil in a pan and add the mustard seeds and cumin seeds. When they start to splutter, add the finely chopped onion, green chili, and grated ginger.

3. Sauté until the onion turns translucent.

4. Add the turmeric powder and salt to taste. Mix well.

5. Add the rinsed and drained poha to the pan and mix gently with a spoon.

6. Add the roasted peanuts and mix again.

7. Cook for 2-3 minutes, stirring occasionally.

8. Turn off the heat and add the lemon juice. Mix well.

9. Garnish with chopped coriander leaves and serve hot.


Precautions:

- Be careful when rinsing the poha to avoid breaking it into small pieces.
